The traditional products of the Maremma are, in many cases, more famous than the Maremma itself. Wines, extra virgin olive oil, chestnuts, mushrooms, cheeses and cured meats, the Maremma has a lot to offer as a tourist destination and as a food and wine destination!

Rosso di Sovana is a niche wine.

All Maremma red wines are unique. They are produced according to tradition, with native grapes and are accompanied by traditional dishes of Tuscan cuisine, ideal in combination with game dishes.

Rosso di Sovana is intense and has a persistent taste.

There are two versions of this DOC: Sovana Rosso, Rosso Riserva Superiore and Rosato.

The most interesting thing about these versions of the Sovana DOC is that each has its own specific production process. The Rosé must rest until January of the year following its production, the Red instead, until May.

The superior until the month of June and the Reserve must rest for at least 24 months in oak barrels and 6 months in the bottle.

CHARACTERISTICS

SOVANA RED

This red wine is made with 50% Sangiovese and the remaining part with grapes from other red grape varieties.

View: ruby ​​red with purple reflections.

Smell: vinous and robust

Taste: on the palate it is balanced and harmonious. Minimum alcohol content 11°.

Pairings: Ideal as an accompaniment to second courses of meat or vegetables, with the exception of tomatoes, and semi-mature cheeses.

SOVANA RED RESERVE

The Riserva is also made up of at least 50% Sangiovese grapes and a blend of other local red berried grapes, but is aged for at least twice as long as the original DOC. It spends three quarters of this aging in locally produced oak barrels. The rest is in the bottle.

Visual characteristics: An intense garnet red.

Olfactory characteristics: Fruity with spicy elements.

Tasting characteristics: On the palate it is dry, warm and full-bodied, balanced. The minimum alcohol content is 12°.

Food pairing: To drink with structured and bold dishes such as braised meats and game.

THE RED OF SOVANA SUPERIOR

The Superiore is made up of at least 50% Sangiovese grapes and a mixture of other local red grapes such as Ciliegiolo or Merlot. The grapes are harvested by hand and processed separately. The wine ages for at least 6 months in the bottle.

Visual characteristics: Ruby red.

Olfactory characteristics: Fruity and floral with hints of cherry jam, black pepper and balsamic vinegar.

Taste characteristics: On the palate it is dry, full-bodied, moderately tannic, slightly acidic. The minimum alcohol content is 12°.

Food pairing: Perfect with vegetable soups, red pasta with sausage, game with beans, white meats with wild berry or cherry sauces, pork cooked in wine and aged cheeses.

THE ROSE

Like red: at least 50% Sangiovese grapes and a mixture of any other local red grapes, but the maceration of the skins is reduced and only a part of the tannins are used to obtain the characteristic pink color.

Visual characteristics: Pink color with ruby ​​reflections.

Olfactory characteristics: Vinous, delicate, with intense fruity notes.

Tasting characteristics: On the palate it is soft, slightly acidic, rounded, fresh, harmonious and well structured. The minimum alcohol content is 11%.

Food pairings: Tuscan bruschetta, grilled steaks, lentil soup and pasta with peppery sauces.
