Maremma-style wild boar
Wild boar is one of the most traditional dishes of the Tuscan Maremma, a land historically linked to the peasant tradition. In fact, Maremma has an ancient tradition of wild boar hunting, still widespread throughout the territory today.
Ingredients :
4 cloves
2 bay leaves
2 carrots
4 tablespoons of extra virgin olive oil
1 sprig of rosemary
1 tablespoon juniper berries
8 cups of red wine
1 onion
2 stalks of celery
400g of wild boar meat
80g of bacon
Salt to taste.
Method :
Cut the meat into cubes and leave it to marinate in wine and vinegar overnight. This procedure will eliminate the strong taste of the game. Dry with a sheet of paper and brown the meat for 10 minutes in a pan with a spoonful of oil.
Fry the bacon for about 10 minutes with the chopped onion, celery and carrots, over medium heat. Now add the meat and cook for a few more minutes, then add all the spices and cook for another 3-4 minutes.
Lower the heat and add the wine, leave to cook for at least 1 hour and a half, stirring occasionally.
