Persian-influenced ingredients from Israel such as walnuts, orange zest and honey have been blended with classic Maremma desserts – olive oil and white wine – for a cookie that is crunchy on the outside and soft and gooey with every bite.

Today the biscuits remain a symbol of the local fusion cuisine known as Goym. It was a way for Jewish bakers of the time to commemorate the harmony they once shared with their neighbors and perhaps even remind their children that things weren’t always so bitter in Pitigliano.

The Pitigliano ghetto had its own bakery, which they called the Azzime and where every morning they prepared these biscuits together with the unleavened bread. I decided to buy one and put my decidedly shaky Italian to the test. My language skills failed to impress me, but the cookie did not.
The honey in the filling is boiled before adding the other ingredients, so it gets this amazing caramel, almost maple syrup flavor. It is the biscuit’s most distinctive feature, complemented by nuts and breadcrumbs that give it texture and orange zest that provides a final note of freshness. It reminded me, and the people of Pitigliano forgive me, a roll of figs. It’s rich and chewy with a distinctive caramel flavor. The surrounding biscuit is thinly rolled and tastes like shortcrust pastry.

I’ve always thought that Tuscany was one of the few places in the world that can transport you hundreds of years back in one bite. Pitigliano’s Jewish community dispersed during World War II, but the biscuit has survived as a reminder of their hardships, as well as a way for modern locals to remember all that the community contributed to their culture, cuisine and heritage.

For travellers, the eviction of Pitigliano is an opportunity not only to get to know but also to savor part of the history of Tuscany, and it is one of my most significant memories of the Maremma. The biscuit is a Slow Food product and I was lucky enough to learn the recipe from a Pitigliano expert in Jewish culture and history. I’d love to share it with you.

These biscuits are best enjoyed on the day they are made… perhaps with a glass (or three) of delicious vin santo.

Ingredients:

For the pastry:
300 g of flour
150 g of sugar
3 eggs
150 g of olive oil
7 g of baking powder
2 tablespoons dry white wine
2 tablespoons finely grated lemon zest
salt

For the stuffing:
500 g of acacia honey
200 g of finely chopped walnuts
50 g of breadcrumbs
a pinch of nutmeg
2 tablespoons finely grated lemon zest, extra
1 egg yolk, to brush the surface

Method:

To prepare the dough, place all the ingredients in a bowl and mix until a smooth dough forms. Knead very lightly, then wrap the dough in cling film and refrigerate for 30 minutes.

In the meantime, prepare the filling by placing the honey in a saucepan over a low heat and cook, stirring, until it starts to boil. Spread the walnuts, breadcrumbs, nutmeg and lemon zest on top. Mix well and cook for a further 10 minutes or until the mixture is the color of dark toffee.

Being careful not to burn yourself, pour the honey mixture onto a cutting board. Form the mixture into balls with the help of two lightly greased spoons of olive oil. Leave to cool on a sheet of baking paper and then form sausages about 25 centimeters long and 3-4 centimeters wide.

Preheat the oven to 180°C (350°F).

Roll out the dough on a lightly floured surface to a thickness of 0.5 mm and a rectangular shape. Cut 5cm thick strips and place one of the filling “sausages” in the center of each. Brush the edges of the shortcrust pastry with the beaten egg yolk and seal around the mixture.

Place the evictions on a baking tray lined with baking paper and brush the surface with more egg yolk.
