If you want to get rid of some of the hare&#8217;s overwhelming game, soak it in a vinegar and water mixture overnight. Rinse before continuing<\/li>\n<li>Peel and mince the garlic with a large handful of parsley leaves. Add to a skillet with 5 tablespoons of olive oil and fry over medium heat until golden brown.<\/li>\n<li>If using, add chopped liver and spleen. Cook for 6 minutes.<\/li>\n<li>Add the rest of the meat, the wine and turn the heat up to high to remove most of the wine.<\/li>\n<li>Reduce the heat and simmer the hare for 10 minutes. Season with salt and pepper and add the canned tomatoes.<\/li>\n<li>Cover and cook for half an hour, adding more water if necessary to keep the sauce from sticking.<\/li>\n<li>After half an hour add a spoonful of tomato paste and half a cup of water. Partially cover and simmer for another half hour.<\/li>\n<li>While the sauce is cooking, boil the pappardelle following the instructions on the package.<\/li>\n<li>Add the sauce to the cooked pasta, mix and serve with grated parmesan.<\/li>\n<\/ol>\n<p><strong>Chef&#8217;s Tip:<\/strong> Pappardelle are wide strips of pasta with wavy edges that pair very well with rich sauces.
