Here, according to tradition, the monks used to grow native local vegetables, and precisely one of those crops, that of the onion, has been revived in recent years and is at the center of a new regulation which protects its production and promotes the diffusion of a native Amiata cultivar. The project was born with the main objective of collecting and cultivating the ancient varieties of onions from Monte Amiata, starting with cultivation in the lands included in the Bosco della Santissima Trinit\u00e0 Nature Reserve, as originally happened. The CNR-INVALSA of Follonica, the Department of Life Sciences of the University of Siena, the Cultural Association for the Selva and the Municipality of Santa Fiora collaborated on the project to protect the Selva onion, with the help of some farmers from the territory of Santa Fiora. The project falls under regional law 64\/2004 relating to the protection and enhancement of the heritage of local breeds and varieties of agricultural, zootechnical and forestry interest. The onion that is grown is treated naturally, without the use of fertilizers, fertilizers, preservatives or herbicides.
